Chocoladefabriken Lindt & Sprüngli AG, more commonly known as Lindt, is a Swiss chocolatier and confectionery company founded in 1845 and known for its chocolate truffles and chocolate bars, among other sweets.
Ghirardelli Chocolate Company

The Ghirardelli Chocolate Company is a United States division of Swiss confectioner Lindt & Sprüngli. The company was founded by and is named after Italian chocolatier Domenico Ghirardelli, who, after working in South America, moved to California. The Ghirardelli Chocolate Company was incorporated in 1852, and is the third-oldest chocolate company in the United States, after Baker's Chocolate and Whitman's.
Kirsch

A kirschwasser or kirsch is a clear, colorless fruit brandy traditionally made from double distillation of morello cherries, a dark-colored cultivar of the sour cherry. However, it is now also made from other kinds of cherries. The cherries are fermented completely, including their stones. Unlike cherry liqueurs and cherry brandies, kirschwasser is not sweet.

Conche

A conche is a surface scraping mixer and agitator that evenly distributes cocoa butter within chocolate, and may act as a "polisher" of the particles. It also promotes flavor development through frictional heat, release of volatiles and acids, and oxidation. There are numerous designs of conches. Food scientists are still studying precisely what happens during conching and why. The name arises from the shape of the vessels initially used which resembled conch shells.
Coenraad Johannes van Houten

Coenraad Johannes van Houten was a Dutch chemist and chocolate maker known for the treatment of cocoa mass with alkaline salts to remove the bitter taste and make cocoa solids more water-soluble; the resulting product is still called "Dutch process chocolate". He is also credited with introducing a method for pressing the fat from roasted cocoa beans, though this was in fact his father's invention.

History of chocolate

The history of chocolate begins in Mesoamerica. Fermented beverages made from chocolate date back to 350 BC. The Aztecs believed that cacao seeds were the gift of Quetzalcoatl, the god of wisdom, and the seeds once had so much value that they were used as a form of currency. Originally prepared only as a drink, chocolate was served as a bitter, from a liquid, mixed with spices or corn puree. It was believed to have aphrodisiac powers and to give the drinker strength. Today, such drinks are also known as "Chilate" and are made by locals in the South of Mexico. After its arrival to Europe in the sixteenth century, sugar was added to it and it became popular throughout society, first among the ruling classes and then among the common people. In the 20th century, chocolate was considered essential in the rations of United States soldiers at war.
Swiss chocolate

Swiss chocolate is chocolate produced in Switzerland. While cacao beans and other ingredients such as sugar can originate from outside Switzerland, the actual production of the chocolate must take place in Switzerland. Switzerland's chocolates have earned an international reputation for high quality with many famous international chocolate brands.

The Imhoff-Schokoladenmuseum was opened by Hans Imhoff on 31 October 1993. It is situated in the Cologne quarter of Altstadt-Süd on the Rheinauhafen peninsula. The exhibits show the entire history of chocolate, from its beginnings with the Olmecs, Maya and Aztecs to contemporary products and production methods.

August R. Lindt, also known as Auguste R. Lindt, was a Swiss lawyer and diplomat. He served as Chairman of UNICEF from 1953 to 1954 and as United Nations High Commissioner for Refugees from 1956 to 1960.
